Brut172 did not need to open the restaurant to generate revenue. By using SOUS, the team could launch a nationwide concept without relying on multiple systems or manual coordination. Orders, logistics and execution were handled in one place, making it possible to go from idea to live in a single day. This turned what would normally be a closed day into €70,000 in sales and showed that revenue is no longer limited to opening hours or physical capacity.
